a bag of creamer potatoes, 3 multicolored bell peppers, 6 heirloom tomatoes, 4 ears of corn, 2 gravenstein apples, a chocolate panini, a bunch of rainbow chard, 3 anaheim peppers, and a bag of green beans - woohoo!
So what did I cook up with all that loot? Some tasty eats, baby! Here goes:
Spicy tomato black beans, quinoa, and sauteed chard, peppers, and onion
(served with corn tortillas, as most things I eat are!)

Sloppy lentil Joe's, corn on the cob, and pretty bell pepper for garnish :)
I've you've never made sloppy Joe's with lentils - do it! Even my skeptical husband loved 'em! I cooked 1 cup of lentils (3 cups water), then added a can of tomato sauce, a bell pepper, an anaheim pepper, half an onion, 2 T. or so of molasses, a T. of cumin, and a T. of chili powder. It made enough for each of us to bring leftovers for lunch the next day - pretty impressive!
Oh, and I can't end a post without some cute kittie porn! Oh wait, that sounds wrong! How about, "cute kittie uber cutieness?"

If there was a hand touching her, it could be "stop teh tickelz!"
The Sloppy Joe's look awesome! What a great idea to use lentils.
How is the house hunting going?
aaaaaaaaaahahaha! cute kittie uber cutieness made me smile! yay for kitties!
no worries about the posts - sounds like you've been uber busy with work lately!
those sloppy joes look sooooo tasty! i always forget about make'n sloppy joes. i've had them with tempeh before, but not tried making them with lentils. this i'm gonna have to try making it with lentils because sometimes the tempeh gets to be a little too overpowering.
what a beautiful farmer's market haul! and all for under twenty bucks - yay!
i heart cats, the farmer's market, and yummy fud. your post had all three! we have a great farmer's market here in b-town. we're kind of broke so we also use the local food bank-(that specializes in locally grown/organic/healthy food) and can usually score some veggie goodies there.
Hi Chelsea!
I haven't made much from V'Con but the blueberry brownie recipe is worth it!
And I see you have named your kitten, Cookie! She is super cute as is Zoe!
I love how similar our blogs look too! xox
Your kitties are so cute! And wow, Cookie looks bigger already. Glad you picked a cute name!
I've been meaning to try the VCon Snobby Joes, which are also made with lentils. Just haven't got around to it yet.
And indeed, the Micky D's baked apple pies are vegan according to their website. I added a link to their ingredient site on my post. I haven't had one since I found out, but hopefully the trans fat will keep me away. Good to know though when you're stuck in a small town and starving.
Also, upon closer inspection of their ingredient list, the McDonald Cookieland cookies are also vegan.
I love your kitties! And all your great food ideas are telling me I must go to the Farmer's Market tomorrow.
