My first sushi!

Why have I not made sushi before? It is so super duper easy! A few weekends ago the Radical Cheerleaders for AR had a fundraiser party, and one of the squad members made a ton of sushi for it. I was inspired when I heard how cheap it was!

A few pointers:
Rice Vinegar is a must. Just cook your sushi rice in a rice cooker, then mix in about 2 T. of the vinegar. Voila!
Use some Tofutti Cream Cheese. I forgot I had it in the fridge until I was on my 2nd roll!
Don't buy wasabi in a tube. It's weird. The powdered kind is actually good, just mix it with water to make a paste.
Have a little container of water nearby when rolling to rinse the sticky rice off your fingers. It will also help to seal up the end.
Play around with the arrangement of rice and veggies. I never figured out how to get the veggies in the middle instead of on the side, but I will! Have fun!

Don't forget dessert! Strawberries and bananas with leftover ganache from VWAV Raspberry Blackout Cake. And a boozy concoction of coffee liquor, vodka, and chocolate almond milk :)

A couple nights later, Jesse made some fancy sushi that put mine to shame! haha Behold:

oh wow! i think ALL the sushis look great, Chelsea! mmmmmmmmmm! i especially love the roll with the tofutti! we love to make sushi rolls with cucumber & tofutti cream cheese in it - now i'm gonna have to try a roll with avocado 'n tofutti! mmmmmmmmmmmmm! (i'm with you on the tubed wasabi - it's just weird - the powdered stuff is just as awesome, indeed!)

p.s. - coffee liquor + vodka + chocolate almond milk sounds like heaven! hooray!

Those look great for your first roll! I've made it a handful of times and it's always ugly as shit. Love the cream cheese suggestion!

My fave roll is the Spicy Tempeh Roll on the PPK!

Hey, I'm always browsing tons of vegan sites and found yours and decided since your blog has been so helpful to offer a tip! When you do the rolls, spread the rice further down to about an inch from the edge furthest from your body/the top where you start to roll it and make it pretty thin/short. Then line up the veggies about a third of the way from the top/side closest to your body. Then when you roll it they'll be more or less in the middle! The trick is making sure you don't have too much rice/filling otherwise it won't roll all the way but in that case you can always unroll it and take some out. :)

Like what megagem said, leave an inch border all around for the rice and spread it super thinly over the entire seaweed paper, and that's how you get the veggies in the middle. YUM! Adding a touch of sesame oil or seeds adds nice bouquet.
